Welcome to dinner, today we are serving blackened catfish. First, you start with a few spices and a nice black skillet.

Don't forget the beer for the cook!

Arrange your fillets so you can season them. Make sure you get both sides...I hate food that only tastes good on one side! ;)

Preheat your pan. Since I'm naturally geeky, I use a non-contact infrared thermometer. As you can see from the pic, it's hot! A little oil in the pan and you are good to go. Fry till a golden bronze and serve! Michael (wireless) IM: mwsmith70
